Congo Bars
This recipe is meant to complement "Where Are the Cookies" which was originally posted on 7/24/13. You can find that post in the July 2013 archives.
Ingredients
- ½ cup chopped nuts
- 1 box brown sugar
- 3 eggs
- 2/3 cup vegetable oil
- 2 ¾ cups flour
- 2 ½ tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2 cups any combination baking chips (semi-sweet, milk, and white chocolate, butterscotch, etc.)
Procedure
- Put the nuts in a small shallow pan; toast at 325°F for 5-7 minutes. Set aside to cool.
- Increase heat to 375°F.
- Mix together the sugar, eggs, and oil until well blended. Add the dry ingredients and stir just until blended. Stir in the nuts and chips.
- Spread on an ungreased 15 x 10 cookie sheet with 1 inch high sides. Bake 15 minutes. Remove from the oven promptly and cool.
- Do not overbake.
