Ultimate Ginger Cookies

This recipe is meant to complement the blog "Ultimate Ginger Cookies" which was posted June 16, 2016. You can find the post in the June, 2016 Archives.

Ingredients

  • 2 ¼ cups flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 ½ tsp ground cloves
  • ½ tsp nutmeg
  • ½ tsp ground ginger
  • ¼ tsp kosher salt
  • 1 cup dark brown sugar
  • ¼ cup vegetable oil
  • 1/3 cup molasses
  • 1 extra large egg
  • 1 1/4 cups chopped crystallized ginger (6 oz)
  • Extra sugar (I use sparkling sugar)

Procedure

  1. Sift together the first 7 ingredients. Set aside.
  2. Beat together the brown sugar, oil and molasses for 5 minutes.
  3. Add the egg and beat 1 minute.
  4. With the mixer on low, add the dry ingredients until incorporated.
  5. Stir in the crystallized ginger.
  6. Roll 1 ¾ inch balls of dough in extra sugar. (I use a melon ball scoop.)
  7. Place on parchment lined cookie sheet and bake exactly 13 min at 350°F.
  8. Let stand 1-2 minutes before cooling on racks.
