Unbelievable Cookies
This recipe is meant to complement the blog "Unbelievable Cookies" which was posted June 21, 2017. You can find the post in the June, 2017 Archives.
Ingredients
- 1 cup creamy peanut butter
- 1 cup sugar
- 1 egg
- 1 tsp vanilla
Instructions
- Cream all the ingredients together. No, I did not forget the flour.
- Form into 1 inch balls on a parchment lined cookie sheet.
- Slightly flatten with your hand, or you can use a fork to make the usual crisscross pattern of most peanut butter cookies.
- Bake at 350°F for about 10 minutes, until they start to brown and firm up around the edges.
- Remove the pan to a cookie sheet on a wire rack and let sit at least 20 minutes to firm up.
- Carefully move the cookies from the pan to the rack alone and allow to cool completely.

Makes 18 or so.
